One Week No Gluten No Dairy No Sugar No Coffee My Anti Inflammatory Results

One week ago, I decided to go all in: no gluten, no dairy, no added sugar, no coffee, and a lot more foods that help my body feel calm instead of inflamed.

And honestly? It was not as hard as it sounds.

I think the biggest reason is that I was locked in. I was ready to make changes, and that mindset helped so much. When your mind is made up, the daily choices feel a little less dramatic. I was not trying to make gourmet meals or follow some complicated plan. I kept it simple, found foods I actually enjoy, and repeated them.

This is my honest one-week update, what I ate, how I felt, what changed, and why I am even more excited to keep going.

Quick note before I get into it: this is my personal experience, not medical advice. Everyone’s body is different, and big diet changes are always worth discussing with a qualified health professional if you have health concerns.

What I cut out for the week

For this first week, I removed:

  • Gluten

  • Dairy

  • Added sugar

  • Coffee

I also focused on adding foods that feel better for my body. For me, that meant whole foods, protein, healthy fats, vegetables, and simple meals I did not have to overthink.

The coffee part was probably the biggest adjustment at first. I am not going to lie, the first few days without coffee were rough. My mood was not cute, lol. I was grumpy. But after those first few days, something shifted. My mind felt clearer, and my mood started improving.

That part surprised me the most.

I know there is so much information out there about weight loss, healthy living, inflammation, food sensitivities, and what we “should” be eating. It gets overwhelming fast. My goal for this week was not perfection. It was to create a clean, simple reset and pay attention to how my body responded.

What I ate most days

I eat a lot of the same foods daily, and I am totally okay with that. It cuts down on decision fatigue. I do not want to stand in the kitchen every day wondering what I am allowed to eat or what sounds good.

I found simple things I genuinely enjoy, and that made this so much easier.

My usual breakfast was coconut yogurt with chia seeds, gluten free oats, and half a banana. I do not know what it is about this combo, but it makes me happy. It is creamy, a little sweet from the banana, and filling without feeling heavy.

Over the weekend, I switched it up and had eggs with gluten free toast. Nothing fancy, just easy and satisfying.

Lunch has been one of my favorites: rainbow slaw with Primal Kitchen Green Goddess dressing and tuna mixed in. I know that might sound simple, but it works. It has crunch, flavor, protein, and it keeps me full.

Lunch stayed colorful, crunchy, and easy to repeat.

Dinners were simple too. I had meals like:

  • Chicken stir fry

  • Grass fed steak with sweet potato and baby spinach

  • Rainbow slaw with chicken and sliced cucumber

Nothing was complicated. I did not feel like I needed a recipe for every single meal. I just built plates with protein, vegetables, and foods that made me feel good.

For snacks, I had sprouted seeds like pumpkin and sunflower seeds, plus nuts. One day I wanted a sweet treat, so I made anti-inflammatory cookies. They were pretty good, and Kailey enjoyed them too, so I call that a win.

Why repeating meals helped me stay consistent

One thing I learned this week is that simple is underrated.

When people try to change everything at once, food can start to feel like a full-time job. Every meal becomes a project. Every grocery trip feels confusing. Every snack turns into a debate.

I did not want that.

Repeating meals helped me stay consistent because I already knew what worked. I knew what to buy. I knew what I liked. I knew I had options ready when I got hungry.

That made the week feel peaceful instead of stressful.

This is also a big part of my One Week No Gluten No Dairy No Sugar No Coffee My Anti Inflammatory Results experience. The results did not come from eating fancy food. They came from being consistent with simple food.

My week one results

Ok, now for the results.

After one full week, I am down 7 pounds.

I know some of that can be water weight, especially when cutting out foods that may cause bloating or changing carb and sugar intake. Still, seeing that number move felt encouraging.

But the scale was not even the biggest thing.

Here is what I noticed after week one:

  • Much less bloating

  • My body feels less stiff and achy

  • My sleep quality is improving

  • My skin is not as dry

  • My mood improved after the first few coffee-free days

  • Less brain fog

  • My memory feels like it is improving

The mental clarity might be my favorite part. I did not realize how foggy I had been feeling until it started lifting. Feeling more present and clear has been such a gift.

My body also feels calmer. Less puffy. Less heavy. Less irritated.

Again, this is just my experience, but after only one week, I am honestly excited to see how I feel by the end of the month.

What this is teaching me about real wellness

This week reminded me that eating well and living well does not have to be complicated.

It also reminded me that no plan is one size fits all. We are all so different. What works beautifully for one person might not be the best fit for someone else. That is why listening to your body matters so much.

This is a huge reason I want to coach women. I know how difficult it can feel when there is so much information coming from every direction. Eat this. Don’t eat that. Count this. Track that. Fast longer. Work out harder.

It can be exhausting.

I want to help women find a plan that works for their real life. Not a plan that looks good on paper but feels impossible by day three. A real plan should support your body, your schedule, your preferences, and your goals.

When you work with me, my goal is to help tailor a plan that works best for you.

What I am taking into week two

Going into week two, I am keeping the same basic approach.

I am not trying to make this harder than it needs to be. I will keep eating the meals I love, keep paying attention to how I feel, and keep choosing foods that support my body.

This first week showed me that small, steady changes can create a noticeable shift. I feel lighter, clearer, less bloated, and more hopeful.

I am new to this blog stuff, so I hope I have not missed anything, lol. I will keep sharing updates and writing about other parts of this journey too.

For now, I am proud of week one. I am proud I started. I am proud I stuck with it. And I am excited to keep going.

Have a beautiful day!
